  • 1 sheet of store bought frozen puff pastry, thawed
  • 2-3 Houwelings Cocktail Tomatoes on the Vine cut into 1/8 inch slices
  • 2 tablespoons pesto
  • salt and pepper to taste

  1. Preheat the oven to 400F. Create an edge for your tart by scoring a line 2 cm in from each side of your puff pastry. Prick the centre of the tart with a fork to prevent it from puffing up too much during baking.
  2. Bake the empty shell for 20 minutes, or until slightly golden. Remove from the oven and in the centre, evenly spread the pesto and line with the tomatoes. Season with salt and pepper. Return the tart to the oven and bake for another 15 minutes or until the puff pastry is golden. Serve immediately or at room temperature.
